In addition to being convenient, vegetable soup, which consists of various vegetables like potatoes, carrots, and meat, also packs a nutritional punch. Of course, it's even more enjoyable when served with warm rice. Follow the simple recipe below to make vegetable soup:

Ingredients:

  • 2 pcs of chicken breast

  • 2 chicken sausages

  • 1/4 cabbage

  • 1 carrot

  • 1 potato

  • 1 stalk of spring onions

  • 1 stalk of celery leaves

  • 3 cloves of garlic

  • 1 packet of chicken bouillon powder

  • 1 tsp of pepper powder

  • 1/2 tsp of salt

  • Cooking oil, for sauteing

  • Water, for broth, boil, and soak

  • Cooked rice, for serving

  • Nori, for garnish (optional)

Cooking instructions:

  1. Wash all vegetables such as cabbage, carrots, potatoes, spring onions, and celery leaves thoroughly to remove any dirt or residue.

  2. Peel the potatoes, then wash them again as they tend to get dirty after peeling. After washing, dice the potatoes or cut them according to your preference.

  1. Boil the potatoes first on low heat for about 15-20 minutes until they become tender. Avoid boiling them for too long to prevent them from becoming too mushy and falling apart when cooked with other ingredients.

  1. Next, clean the chicken breast thoroughly. Then, boil the chicken on low heat until tender and fully cooked in a separate pot from the one used for boiling the potatoes.

  1. While waiting for the potatoes and chicken to boil, chop the cabbage into small pieces for easy consumption and to prevent choking hazards, or according to your preference. After chopping, it's better to soak the cabbage in salted water to remove any remaining dirt/pests that might not have been removed during the initial wash.

  1. Peel and thinly slice the carrots to ensure they're not too tough or cut them according to your preference.

  1. Take the washed spring onions, discard the roots, and then chop them into small pieces. Cut the celery leaves into similar-sized pieces as the spring onions. Keep the spring onions and celery leaves aside as they will be added to the pot when the vegetable soup is almost ready.

  1. Remove the plastic casing from the sausage and cut it into small pieces or according to your preference.

  1. If the potatoes and chicken are tender, turn off the heat and let them cool for a while.

  2. Once they are no longer hot, shred the chicken into small pieces. Avoid making them too big to prevent choking as chicken breast has a fairly dense texture.

  1. Next, peel the garlic cloves, wash them thoroughly, and then simply crush them.

  1. Once all the main ingredients are ready, sauté the crushed garlic with a little oil over low heat until fragrant.

  1. Once fragrant, add enough water to make the broth for the vegetable soup. Bring it to a boil.
